As many of you may know, I love to swap healthy ingredients for less-than-healthy ingredients in my baking. Sometimes it works out, sometimes, well….it’s time to hit up the pizza place down the street! There are also times that I’m in the midst of making something, and lo and behold, I’m missing some ingredient and there is no time for an emergency grocery run. I scramble to find something with properties that will make up the missing ingredient.
